SOUPS

Chicken & Vegetable Soup

I make this soup on a Sunday afternoon and measure out into 3-5 containers to take to work each day of the following week.


1 pan of water, on medium heat
1 chicken stock cube
1 x courgette
1 x leek
1 x spring onion batch (use all, cut the ends off)
2 x yellow bell peppers (you can use any colour pepper, I prefer yellow)
1 x chilli pepper (spice rating of your choice, I use green)
1 x chicken pack (3 breasts)
3 celery sticks
2 carrots
Petite poise

My suggestion is add the stock cube first to the water along with a pinch of salt and pepper, (personal choice) and then begin cutting up your veg one at a time and adding into the pot.

I added my chicken in the middle of the vegetables, this is so the chicken gains flavour from the veg that's already in the pot such as the leek. And then has enough time to cook.

Once all the veg and chicken has been added, I suggest leaving on medium heat for 30-45 minutes, please make sure your chicken is cooked before turning off. I would also leave the lid on the saucepan and stir occasionally.

As you may know I am wheat intolerant so cannot use flour to make my soup thicker but you can use corn flour which is wheat free.

Vegetable Soup

1 x red bell pepper
1 x green bell pepper
1 x chilli pepper (spice rating of your choice, I use green)
3 celery sticks
2 carrots
Petite poise
Sweetcorn
Cauliflower
Broccoli

My suggestion is add the stock cube first to the water along with a pinch of salt and pepper, (personal choice) and then begin cutting up your veg one at a time and adding into the pot.

Once all the veg has been added, I suggest leaving on medium heat for 30-45 minutes. I would also leave the lid on the saucepan and stir occasionally.

You can also add corn flour or 1 cup of rice to make the soup thicker.

1 Gherkin chopped into segments then chopped in half and half again
Baby spinach leaves chopped up
Cucumber chopped up into segments then chopped in half
Low Fat Ceaser dressing

1 x tinned tuna
